100% Pinot Noir. A vinous rosé Champagne, very dry and focused, with flavors of sour cherry, blackberry compote, mineral and freshly ground white pepper. The texture is very refined, but there's a lot of snap to the acidity here, giving this a vibrancy overall. Try with light food. Drink now through 2019.
The NV Rosé de Saignée is an intense, implosive wine with all of its considerable energy focused inward. Deep, red-hued fruits, flowers, orange zest and mint wrap around the palate. Vinous and richly textured, the Dhondt's Rosé de Saignée is a terrific example of this style of Champagne. The push and pull of dense fruit and minerality is compelling. Even with 10 grams of dosage, the Rosé feels and tastes quite dry. Disgorged: February 2015.
