Do you love drinking Champagne, but not paying Champagne prices? Spain's Cava is made using the same traditional method as Champagne, but usually at a fraction of the price. Grapes for Cava can be grown in a number of locations in Spain, but most by far come form Catalonia in the northeast. Three varieties - Macabeo, Parellada, and Xarel-lo - are the foundation of Cava production, though some international varieties are permitted. Salud!
