Champagne Pierre Gerbais is a fourth-generation grower estate located in Celles-sur-Ource within the Côte des Bar. Under the direction of Aurélien Gerbais, the domaine employs a rigorous, single-parcel approach to viticulture. The estate manages 18 hectares planted on Kimmeridgian limestone soils. Gerbais is recognized for championing Pinot Blanc, known locally as Pinot Vrai, dedicating a full quarter of their vineyards to this rare varietal. The domaine has maintained strict organic Ampelos certification since 1996. Winemaking emphasizes minimal intervention. Utilizing native yeasts, extended aging, and restricted sulphur additions, the resulting Champagnes are highly structured, presenting a distinct chalky minerality and precise acidity.
