Assyrtiko (pronounced ah-sir-tee-ko) is a grape native to Santorini, Greece. The best Assyrtiko examples from this region can be described as exceptionally mineral, bone dry, and high in acid. When grown on the mainland, the wines tend to feature less minerality, more roundness, and a more rustic character. The Santorini style prefers unoaked, although the grape is a bit of chameleon and adapts well to different blends and treatments. Once a hard-to-find cult wine, Assyrtiko is now available in BC for your drinking pleasure.
