Scout Vineyard 2021 Riesling 750ml

Grapes are farmed regeneratively at Scout Vineyard. We did two separate picks for added complexity. Both were de-stemmed and direct-pressed into neutral oak barrels. Wild fermentation was gentle and slow, for over a year. Aged on the lees for 22 months. Bottled with 20ppm sulphur. Nothing else added. Unfiltered. Unfined. 

A small amount of residual sugar gives it texture and weight with lots of bright acidity cutting through.
