A co-ferment is when you ferment 2 or more different kinds of grapes together. Ours is 50% Leon Millot red grapes and 50% Gewurtztraminer. Once picked, the grapes were destemmed together into bins where they started fermenting spontaneously on their skins. While fermenting they were pressed to neutral barrels after 2 weeks to finish fermentation and age. The wines were bottled in May unfined and unfiltered.
The co-ferment is a light red wine served slightly chilled, the perfect wine to pair with your summer BBQ. Bright floral notes, crunchy raspberries and a crisp dry finish.
