Named for the lone old-growth pine on their Black Sage Bench estate at Oliver — Canada's only pocket desert, the northern tip of the Sonoran. Hot desert days build aromatics while cold nights hold acidity and keep alcohol modest. Mostly Sauvignon Blanc with Chardonnay and Pinot Gris, fermented in stainless and rested five months on lees for texture. Pear and melon lead, with grapefruit pith, citrus blossom and a distinctive desert-scrub sagebrush note. Dry, bright and lightly creamy, finishing crisp and savoury. Strong value. Serve 8–10°C.
