A historic 38-hectare estate at the foot of the tuffeau butte at Le Puy-Notre-Dame, certified organic since 2013 and biodynamic (Demeter) since 2017, now led by Jean-Louis Bernet. Fruit is hand-picked from clay-limestone soils; 100% Chenin, fermented with indigenous yeasts and raised twelve months in steel, then rested in 1.5 km of troglodyte cellars carved into the tuffeau. Pale gold. Citrus, white pear and orchard fruit over white flowers and chalk dust. Dry, taut and finely tensioned, with vibrant acidity and a stony, saline finish. Serve 8–10°C.
