Founded in Nuits-Saint-Georges in 1825 and now in seventh-generation hands under Erwan Faiveley, this venerable house draws its regional Chardonnay largely from Côte Chalonnaise and Côte d'Or fringes. Fruit is pressed whole-bunch, fermented cool and aged partly in stainless steel, partly in used barrel — oak as texture, not flavour. 2023 was generous and sunny, yielding a ripe but well-defined vintage. Pale gold; white peach, citrus and orchard apple over almond and light toast. Medium-bodied, clean and precise, with fresh acidity and a subtly chalky finish. Textbook entry-level Burgundy. Serve 10–12°C.
Pairing: roast chicken, goat cheese, sole, quiche.
