The history of Bodega Primitivo Collantes dates back to the 19th century, with the arrival of brothers Primitivo and Tomás Collantes to Chiclana de la Frontera. Today the current Primitivo Collantes is in charge, a young and dynamic member of the new movement of Jerez wines. He oversees the family farm of 55 hectares of vineyards, including the lauded areas of Pozo Galván, Matlián and El Inglês. Ceballos comes from the former finca, and this palomino, from the luminescent albariza soils, rests for 3 years under flor. Tight and nimble, teeming with olive brine, fresh meadow grasses, green herbs, fresh marcona almonds, and ample mouthwatering sea salinity that rings long on the finish.
