A blend of 60% Chardonnay and 40% Pinot Noir matured for 8 years on lees. A lacy white mousse slowly subsides to reveal a pale straw to straw coloured base with gold reflections that has a nimble stream of tiny bubbles flowing through its core. Intoxicating aromas of baked bread, yeast lees, citrus, oily toast like characters, faintly honeyed cashews and brioche entrance the olfactory senses. Rich yet sculptured by vivid chalk tinged acidity, the palate is garnished with a combination of toasty baked bread, pear, yeast lees, citrus and lingering almond elements. Finishes very dry with a long tense aftertaste.
