Kaori is a delicate, aromatic white born from a blend of three indigenous Rioja Oriental varieties: Viura, Maturana Blanca, and Garnacha Blanca, sourced from vineyards shaped by the altitude and Mediterranean-continental climate of the Sierra de Yerga. The grapes are hand-harvested at dawn to preserve freshness, with each variety vinified separately and only free-run juice used. Fermentation happens on fine lees in stainless steel, followed by a few months resting in first- and second-use American oak with the lees, adding subtle texture without overwhelming the wine's natural aromatics. The result is a bright, expressive white with citrus and grapefruit notes layered with hints of tropical fruit and a whisper of vanilla from the oak. On the palate, it's fresh and well-balanced, with lively acidity carrying through to a long citrus-driven finish. Its aromatic complexity and creamy texture make it a natural match for sushi, light meats, and creamy dishes.
