This Uco Valley cab has a new terroir this year as the team continues the search for the best site to showcase the local style of cabernet sauvignon while maintaining its 'claret' image. The colour is ruby red, with an expressive nose of white pepper and five spice. The palate is plummy, and the texture is silky smooth, in the Alberto Antonini style ,with dried herbs that run through the finish. In Argentina, the match is wild boar or rabbit. This cabernet sauvignon is all handpicked, and fermentation occurs in concrete vats for 7 days, with 30% whole cluster and using only indigenous yeasts. It is aged for a minimum of 6 months and has no time in oak. The source is a 50 year old pergola-trained vineyard on deep silt soils with dissolved calcium carbonate, located in Casas Viejas, San Carlos, Uco Valley.
