100% Riesling. We sourced the grapes from Stonehouse Vineyard in Oliver. Farmed organically. De-stemmed and fermented spontaneously on the skins for 21 days. Pressed into neutral oak barrels and puncheons, and aged for 2 years on the lees. Bottled unfined and unfiltered. Nothing taken away or added except 20ppm SO2. Chewy tannins, bright acidity, citrus peel, dried apricots, sea salt and cardamom.
