Nikos Karatzas founded Oenops in Drama in 2015, sourcing indigenous varieties from hand-picked cool-climate and old-vine sites across Greece. The RAW series is zero-intervention by design: Xinomavro from Naoussa and Amyntaio, berry-selected, gently hand-crushed with a small whole-bunch fraction, spontaneously fermented in egg-shaped amphorae and aged six months on fine lees. Bottled unfiltered, no sulphites added, no machinery at any stage. Bright ruby. Black cherry, blackberry and strawberry meet tomato leaf, dried herbs and liquorice. Savoury and juicy on entry, with Xinomavro's signature firm tannin, high acidity and a peppery, earthy, chewy close. Serve 15–16°C.
