The name means "white smoke," after the morning mist that settles over the vines at the foot of the Montagne Noire, between the Atlantic and the Pyrenees. François and Jacques Lurton — fifth-generation growers, winemaking since 1897 — found this Gascon terroir in 1997 and built their most recognized cuvée on it. 100% Sauvignon Blanc, cold-macerated on skins to draw out aroma precursors, then aged on fine lees for body. Pale straw with green flecks. Lemon, grapefruit and passionfruit over honeysuckle, nettle and blackcurrant leaf. Crisp, mineral, precise. Serve 8–10°C.
Pairing: oysters, grilled fish, goat cheese, summer salads.
