The 2023 Botijo Blanco, pure Garnacha Blanca from limestone soils, fermented in concrete and matured in underground concrete vats for seven months. It has a moderate 12.5% alcohol and a pH of 3.25 and is varietal with notes of dried herbs, hay, straw and waxy apples. It has a medium-bodied palate nicely textured, clean and long, with a dry, chalky finish. It keeps the fruit-driven profile and the freshness. 36,000 bottles produced. It was bottled in May 2024.
