Marco Ricasoli-Firidolfi farms 13 hectares at Monti in Chianti, organically certified since 2010, on alberese limestone and galestro schist between 340 and 510 metres. The Sangiovese here comes from San Marcellino, the estate's finest vineyard, hand-harvested and lightly pressed with a portion bled from the vats, fermented cool and rested several months on fine lees. He is candid that rosato, for all its casual image, is among the harder wines to make well. Pale coral. Wild strawberry, redcurrant and blood orange over crushed stone and dried herbs. Medium-bodied, textural, taut, saline.
Pairing: grilled prawns, roast chicken, tomato bruschetta, pecorino fresco.
