A benchmark expression of the appellation from the Bailly family's Bué-based estate, assembled from parcels spanning all three of the Sancerrois soil types — Kimmeridgian marl, flint and pebbly limestone caillottes — with fruit hand-harvested, table-sorted, pneumatically pressed and cold-settled before a natural fermentation in temperature-controlled stainless steel. The 2024 growing season was a demanding one across the Loire, with persistent damp and mildew pressure rewarding rigorous selection; the result here is a Sancerre of real nerve and clarity rather than weight. Pale straw with green-gold reflections, the nose leads with grapefruit pith, lime zest and crisp Granny Smith, layered over white blossom, fresh-cut herbs and a distinctly chalky, gunflint-tinged minerality. The attack is bright and precise, with taut citrus and green-apple fruit stretched across a spine of vibrant acidity, while a brief spell on fine lees lends just enough textural roundness to fill the mid-palate. The finish is dry, saline and persistent, closing on wet stone and a lingering citrus lift. Serve well chilled at 8–10°C. A natural partner for Crottin de Chavignol and other fresh goat cheeses, oysters, ceviche, grilled white fish, or asparagus and spring vegetables. Drink now through 2028.
