Alain Chavy established his own domaine in 2003 on vines inherited from his father, working ten hectares from a Puligny-Montrachet base, entirely Chardonnay and herbicide-free since 2009. En Remilly climbs the slope directly above Le Montrachet — the appellation's most privileged site, and it shows. Harvested early, fermented in 400-litre puncheons and pièces with up to 25% new oak and minimal bâtonnage, then matured most of a year. Expect tension and mineral drive over pear, white peach and citrus, with fresh pastry, nutmeg and a whisper of toast. Succulent acidity, saline finish. Drink 2026–2032; serve 12°C.
