All the wines ferment with indigenous yeasts. In this case, it fermented in stainless steel, coming from very low temperature, and it was kept in stainless steel with the lees. It has a moderate 11.5% alcohol, with a pH of 3.3 and 5.7 grams of acidity. Delicious. 12,000 bottles produced. It was bottled in February 2025.
