Dr. Pieropan traded his medical practice for vines in 1901; the family bottled the first wine labelled Soave in the 1930s, and Nino Pieropan pioneered single-vineyard Soave with Calvarino in 1971. Brothers Andrea and Dario have run the estate since 2017, certified organic throughout. Garganega with 10–15% Trebbiano di Soave from hillside sites at 100–300 metres on volcanic and calcareous soils, fermented cool in glass-lined concrete and rested five to nine months on fine lees — no oak at any stage. Pale lemon; almond blossom, marzipan, white flowers, pear and citrus. Taut, saline, 12% abv. Serve 8°C.
