Ninth-generation Meursault grower Philippe Bouzereau took over the 18-hectare family domaine in 2006, farming a mosaic of parcels from Aloxe-Corton to Chassagne-Montrachet with minimal intervention. This is his emblematic wine: 1.7 hectares of walled monopole at the foot of the old château, planted by his father, on limestone and clay. Pale gold, with white flowers, citrus zest, ripe pear and honeysuckle over toasted almond and restrained vanilla. Silky and layered, richness held in check by vivid acidity and a chalky, oyster-shell close.
Pairing: lobster, turbot, poultry in cream, Comté.
