Ross Hackworth's Naramata Village estate is one of the Bench's three founding wineries, home to Canada's oldest own-rooted Syrah and worked almost entirely by hand, close to dry-farmed, picked into ten-litre baskets. The sparkling is Pinot Noir with a splash of Pinot Meunier from the highest plots, made by the traditional method and bottled with almost no artifice: unfined, unfiltered, bone-dry. Pale salmon-pink. Wild strawberry and redcurrant over citrus pith, bread crust and a chalky, stony edge. Acid-driven, taut and very pretty.
Pairing: oysters, fried chicken, charcuterie, fresh chèvre.
