Alexandre and Frédéric Chaudière's side project to Château Pesquié, named for the old watermills that once studded Provence. Where the Pesquié estate wines come off Ventoux's foothills, Le Paradou sources from growers across the Mediterranean IGP, with organic certification the stated goal. Rolle, Provence's name for Vermentino, picked early to hold acidity; fifteen hours' cold pre-maceration, cool tank fermentation, malolactic blocked, then months on lees in steel. Citrus and green apple lead, with fennel-edged herbs and a waxy, pithy grip. Generous in texture, saline and moreish on the close.
Pairing: grilled sea bass, tapenade, aïoli, seafood salad, young chèvre.
