A family estate at La Chapelle-Vaupelteigne, just north of Chablis, farming since 1950 across both the Kimmeridgian slopes of Chablis and the more varied Auxerrois to the south — where Pinot Noir, not Chardonnay, does the talking. This is 100% Pinot Noir, organically farmed, direct-pressed and cool-fermented in tank without oak. Pale, pretty salmon-pink. Red cherry, wild strawberry and redcurrant lead, with a little citrus zest and white flowers behind. Dry and light-bodied, fruit-forward but taut, finishing with the chalky, saline snap that northern Burgundy gives even its rosés. Drink young.
Pairing: charcuterie, salade niçoise, grilled salmon, chèvre.
