The Durup family have farmed at Chablis for fifteen generations; Jean Durup turned two inherited hectares into 206, rebuilding the Château de Maligny vineyard his great-grandfather once managed, and is now the appellation's largest owner. Petit Chablis draws from the plateaus above the slopes, where younger Portlandian limestone sits in place of the famous Kimmeridgian marl — lighter soil, lighter wine, same Chardonnay honesty. Fermented and raised in temperature-controlled tank, never oak. Pale straw-green; lemon, green apple and white blossom over a chalky snap. Fresh, dry and cleanly fruited, with brisk acidity. 12.5% abv; drink within 2–3 years.
Pairing: oysters, shellfish, sushi, fresh goat cheese.
