Grapes come from our Scout Vineyard in the Similkameen Valley. Gently pressed into neutral barrels where it underwent a long, 10 month spontaneous fermentation. Aged on the lees for a total of 18 months. Unfined, Unfiltered. Nothing taken away or added except minimal sulphur (15 ppm). Leesy, textural with typical bright acid and mineral profile of the Similkameen. Our wines are biologically alive, so we recommend storing them in a cool (10-15 degrees), dark place for optimum stability and aging.
