Back in the 19th Century, Rioja's CVNE produced consistent quantities of sparkling wine to fill the void for Champagne, ravaged by phylloxera. Although the company evolved into being still wine focused, they continued with Cune Cava Brut representing a return to the future. This xarel·lo, macabeo and parellada blend is flush with doughy lees and red apple, and laced with tight salty lashes of lemon, holding in the sides of this generous Cava through the snappy, saline washed finish.
