Chateau Pesquie 2024 Quintessence Rose 750ml

The Chaudière family restored this 17th-century property in the 1970s, and Paul's sons Alexandre and Frédéric have since done as much as anyone to lift the Ventoux out of its bulk-wine past. Vineyards sit at 250–350 metres on clay-limestone at the foot of the mountain, certified organic and vegan, farmed biodynamically since 2015 — altitude and mountain air giving a freshness the southern Rhône rarely manages. This rosé was developed with sommelier input, and it shows: deep coral pink, with juicy ripe red berries, fine spice — Timut pepper — and delicate florals, finishing on gentle bitters that stretch the palate.

Pairing: grilled tuna, tapenade, ratatouille, goat cheese, herbed roast chicken.
