Carlo Botter and his wife Maria began selling wine from casks and demijohns at Fossalta di Piave, near Venice, in 1928; the faun on the seal has marked the label ever since. Fruit comes from the Triveneto, where Alpine shelter and Adriatic breezes give slow ripening and wide diurnal swing. Soft pressing, then two to three weeks' cool fermentation in stainless, with no oak. Bright straw with green glints. White flowers, green apple, pear and peach, light and fresh. The palate is dry and lightly structured, cleanly acidic, closing on gentle minerality.
Pairing: aperitivo, seafood, grilled fish, white meats, vegetable dishes.
