The Sanz siblings, Alejandra, Marco and Richard, are the sixth generation of a Rueda family farming since 1820, and founded Menade in 2005 as the region's first organic winery. The vineyards run on plant infusions, ozone and whey rather than chemicals, with insect hotels for pest control and no copper or sulphur sprays. Sauvignon Blanc off roughly 25-year-old vines on clay-limestone, harvested in three separate passes, fermented with native yeasts in stainless and briefly aged on fine lees. Greenish lemon-yellow. Explosive ripe peach, dried apricot and grapefruit over cut herbs. High acidity, long.
Pairing: shellfish, grilled white fish, asparagus, goat cheese, green salads.
