Single vineyard, clone 777, Organic viticulture practices. Destemmed with zero crushing; we like our berries to be intact, this helps with preserving some of Pinot’s delicate flavours and aroma. Ambient yeast with hand punch downs daily for a total of 13 days on the skins before we drain and press. Allowed to settle overnight and then racked to a combination of 40% third fill French, 40% neutral, 20% concrete. Natural malo with 9 months total evelage. Unfined and unfiltered.
