I tasted again the 2019 Savagnin Sous Voile from old vines, mostly from the Montigny hill on blue marl soils, though it also comes from different plots in different lieux-dits on marl soils. It aged under a veil of flor yeasts in 228-liter oak barrels for 36 months. It's classical Savagnin with flor, with notes of spices, nuts and a rich texture, with density and 14.5% alcohol. It's aging at a slow pace and is tasty and persistent, clean and balanced, with a dry, almost salty finish.
