28.00 Grown at our Scout Farm in the Similkameen Valley. Inspired by some of our favourite Rieslings around the world that see long fermentations, and even longer aging, we set aside a small amount of our 2018 Riesling to age for further, 22 months total in qvevri and neutral barrels (in contrast to 10 months aging of our previous 2018 release). While it required some patience, we found that we were rewarded with a deeper waxier texture, and more honeyed, floral aromas. Fermentation was spontaneous, and we bottled without any filtering, fining or other additions except a small amount of sulphur (25ppm) for stability. We recommend drinking this at cellar temps and over the course of 3 days… it gets better by day 3. Or feel free to lay this one down for many more years if you have the patience!
