At Shady Lagoon, our home vineyard there are 3 blocks of Cabernet Sauvignon. In 2018 two of the blocks marked their 12 years since being planted and our block which is situated at the front of our vineyard was at that time 8 years old. Most years, each of the blocks is harvested and fermented separately in our stainless-steel tanks. In 2018 each block also finished secondary fermentation separately in barrels. We had some rigorous barrel tastings of all three blocks before making final decisions for our Cabernet Sauvignon unfined and unfiltered bottling at the end of June 2020
On the nose a deep well of ripe and brooding black fruits, ripe plums, melted black licorice with a glimmer of floral and baking spices. Weighty but never overbearing core, with intense flavors of black mission figs and dark currant preserves. Finishing long and plush while maintaining its elegant charm and poise. Envisioning a pairing with beef osso buco this fall.
