So pale in colour for such an intensely aromatic and flavourful wine! The Cariblanco opens with a pronounced herbal nose: parsley, dill, a freshly mown lawn after rain in spring. With time in the glass, the green notes settle down to reveal citrus fruit and a pleasing minerality, both of which continue onto the palate (with the herbs remaining in the background) for a long finish. This wine shows a bright acidity that will make it excellent with food – salmon with dill sauce to echo the herbal notes, or snapper with pineapple salsa to complement the citrus, just to name a couple of potential pairings.
