The Stout’s grain bill weighed heavily on Marris Otter, an heirloom variety malt, prized by Craft Brewers; and a select blend of oats, roasted barley and Carafa III to build up the rich colour and base of the beer. We kept in mind, the higher alcohol would need careful consideration as an essential flavour component in the overall mouthfeel of the beer.
Clean stainless fermentation, then transferred and aged in rum barrels sourced from the French island of Martinique in the Caribbean Sea.
The beer now carries beautiful notes of caramelized sugars, vanilla, molasses and is incredibly smooth even at its impressive 10% alc./vol.
