Soil and vines:
½ calcareous soil ½ clay soil of the bajocien
50% Chardonnay 50% Pinot Noir

5000 vines / ha
Production:
30,000 bottles
Harvest, wine making and breeding:
Harvests made by hand, pneumatic pressing in whole grapes (150kg for a maximum of 100 liters ). Alcoholic fermentation then malolactic fermentation in tank. Bottled for the foam grip at the beginning of the year according to the harvest. Breeding on slats in bottles from 15 to 18 months, draining with a light dosage.
Tasting:
It has fine bubbles and it is very fruity with notes of vanilla and green apples. In mouth, this sparkling wine is powerful and has a strong “vinosité” while it remains well-balanced.
Culinary matches:
This “Crémant” can adapt itself to multiple festive opportunities : as an apéritif and/or as an accompaniment to dessert.
Ageing:
Can be drunk now or be kept for 2 to 5 years.
Shipping & Returns
We use Canada Post for the majority of deliveries and a courier for those nearest our location. If you are not at home when Canada Post attempts delivery of your package, they will leave a note with the nearest pickup location. We cannot ship outside of the province and packages delivered by Canada Post cannot be left on the doorstep because there is an age check requirement (19+) for alcohol. Packages shipped to downtown Vancouver may arrive the same day or next day depending on time of order. Order cut-off is generally 12pm on a best-efforts basis. We will contact you if we require more information to set up delivery.
