Alvear Amontillado Viejisimo Solera Fundacion 375ml

I tasted the new 2019 bottling of the exceptional NV Amontillado Viejísimo Solera Fundación, their oldest Amontillado they now reckon could be up to an average age of 80 years (!?). It has the intensity and concentration of evaporation through age, and it has 20% alcohol with nine grams of acidity (tartaric). It has a brown color with some faint green around the edge and a more oxidative nose with some lovely rusticity in this bottling.
