Hand-picked from a single block of 1985 Clone 93 Pinot Noir, this traditional method sparkling has quickly become a crowd-pleaser!
A magnificent pale rose petal pink in colour, the wine pours with a wonderfully persistent bead and delicate texture. Aromas of sun-baked cherry, fresh oysters and brioche lift out of the glass. The palate has a voluptuous mouthfeel highlighted with red berry fruits and lush mandarin topped off with a pink grapefruit flesh finish that carries on and on. We see this sparkling evolving beautifully over the next 5 to 7 years.
The base wine was fermented and aged for 6 months in neutral oak barrels. Secondary fermentation took place in late May during its two-year tirage. The wine was disgorged in the Spring of 2017 and received a light 2015 Juveniles Pinot Noir dosage before finishing in bottle.
