As an English writer once wrote, Soave "tastes like a sunny clear sky if you could drink it." Sergio Prà uses Garganega grapes harvested from 30 to 60 year old vines on slopes of weathered volcanic rocks, which are located in Soave Classico. A newly invigorated region and style now achieves moderate yields and higher concentration of grapes, which are then cool-fermented in stainless steel in order to retain freshness. On the nose, inviting aromas of yellow fruit, lemon oil, and white flowers lift from the glass. More of the same on the palate, with a minerality and freshness that is truly unique. Try pairing with Parma ham, fresh cheese, pasta, fish risotto, soup, and fresh vegetables.
