Vinos Ambiz is a natural wine project by Fabio Bartolome located in Sierra de Gredos, North-West of Madrid. Fabio was born and raised in Scotland by Italian parents but moved to Spain some 20 years ago where he has been making low intervention wines since 2003. Mostly described by many like a genuine and crazy character, Fabio makes truly unconventional wines made of only 100% grapes and nothing else.
