Vincent Caillé is a 5th generation winemaker who emphasizes natural and traditional winemaking practices. The 25 or so hectares of vineyards he farms also receive biodynamic treatment in addition to being certified organic by Ecocert.

Caillé makes excellent sparkling wines, including this bottle of X Bulles from producer Le Fay d'Homme. This bubbly is made from 100% Melon de Bourgogne in the traditional style, which means the wine is bottled before all the residual sugar is fermented into alcohol - no additional sugar is added. On the palate, X Bulles is fresh, light, with a zippy acidity. Great on its own as an aperitif, or with fresh oysters, shrimp, or similar types of seafood.
