Pedro Ximenez, or PX, as it is known, is a thin-skinned variety grown principally in Spain. Normally it produces very sweet juice; any sherry that is not fully dry has almost certainly been sweetened with wine made from PX grapes that have been dried in the sun. This rendition of the grape is a unique, flavourful and un-oaked. It gives off aromas of white peaches, lime and a bit of almond. The palate follows through with those flavours in a fleshy wine with fresh acid. This wine has good versatility and can be enjoyed on its own while making a great pairing for any tuna dish.
