Grapes come from our Scout Vineyard in the Similkameen Valley. Destemmed into various qvevri where they spontaneously fermented between 7-21 days on the skins. Gently pressed back into qvevri where it sat on the lees for 7 months. Zero additions, nothing added or taken away. Wet stones, cured meat, soft tannins. Our wines are biologically alive, so we recommend storing them in a cool (10-15 degrees), dark place for optimum stability and aging.
