Even though claims that the grapes were ?hand-pressed by 14 vestal maidens? proved to be exaggerated (turns out 13 of them weren?t all that ?vestal?), there is a purity and innocence to this wine that is truly extraordinary. Using crisp, minerally Chablis as their template, the folks at Banshee fermented and aged this 2011 offering in stainless steel tanks to retain its natural beauty and cool-climate heritage. The wine never saw a molecule of oak. With two-thirds of the grapes coming from the frigid Sonoma Coast appellation, it channels the very essence of Chardonnay as pear, apple and citrus aromas herald slightly more open-knit flavors of chilled Asian pear, pineapple and Mandarin orange zest.This pale-straw wine is bright and rich, featuring aromas of green apple, peach, melon and a touch of buttered toast. Tropical fruit flavours are balanced with floral notes, vanilla and spice. The finish is fresh yet silky.
