Spring is a wild fermented cider aged on our 3 fave plums for about 7 months: red, blue and golden. Each add their own layer of personality.
Together they smell like strawberry cotton candy, but Spring is totally dry as per usual.
Golden plums bring zippy acidity and bright stone fruit aromatherapy. Red and blue plums give Spring major cotton candy vibes (does strawberry cotton candy exist? If so it should meet Spring).
The combo of energetic acid and snappy plum-tannins can only be described as ‘crunchy’ - a term you may have heard from the wine world.
Having worked with both plums and grapes, we can confidently say that plums are the one and true embodiment of the crunch experience.
