Poppyshake 2022 Sauvignon Blanc 750ml

We let a portion of the grapes for this wine ferment on skins for 7 days before pressing it off with a gentle barrel press. Inspired by the beautiful creamy texture of Kutatas’s Pinot Gris we did a full solids ferment on this wine, meaning we didn’t rack off any of sediment or lees after pressing and allowed the wine to age on both the heavy and fine lees over the winter in barrel. We are really in love with this wine. It feels both textural and delicate with enough acidity to stand up beautifully to food while also being delicious on its own.
