"This sparkling wine was made following to the traditional method from the Champagne. The grapes for the wine production origin from several vineyards. We try to keep the acidity and ripeness balanced. The fermentation happens in stainless steel tanks. After reasonable ripeness the basic wine gets filled into the bottle, where the fermentation of the sparkling wine takes place. To initiate the fermentation, each bottle is added sugar and yeast. The wine stays in contact with the yeast for about 12-18 months. For the separation afterwards, we do the “remuage”. This enables the following disgorging."
